2-4 cloves of garlic (depending on your tolerance)
4 Spinach and Chicken Sausages chopped
3/4 of a box of rotini
3/4 of a can of chicken broth
1 tsp basil
1 can diced Italian style tomatoes
1/2 bag of spinach
Freshly grated Parmesan Cheese
Cook the rotini per the directions on the box and set to the side.
Brown the onion and garlic in olive oil. Add the chicken sausage until warm. Add the basil, chicken broth, and tomatoes, cover and simmer for about 5 minutes. Add the spinach (I tear in half for smaller pieces). Cover and simmer for 5 minutes or until spinach is reduced. Add the rotini and top with cheese.
